How to make salted caramel weed brownies?

  1. Preheat the oven to 175 °C. Line a baking sheet with baking paper. Spread the pecans on the baking sheet and roast them for 7 to 9 minutes. Let the nuts cool and chop them coarsely.
  2. Grease a 20-centimeter square baking pan with butter and line the bottom and two sides with baking paper.
  3. Put the butter with the chocolate in a heatproof bowl and melt it au bain-marie or in the microwave. Let the melted mixture cool slightly.
  4. Meanwhile, beat the two eggs and egg yolk with the sugar, salt and vanilla extract until fluffy, about 5 minutes using a (hand) mixer with whisk(s).
  5. Using a spatula, mix the chocolate mixture into the fluffy mixture until even. Then also mix in the flour and cocoa powder and finally add ⅔ of the toasted pecans.
  6. Pour the batter into the baking pan and bake the brownies for 40 minutes. Then let them cool completely in the mold.
  7. Put the whipping cream with the salt in a saucepan and bring to a boil. Meanwhile, put the sugar with the water in another (tall) pan and let it boil until a golden brown caramel. In the beginning you can stir a bit to mix everything well, but once the mixture boils you really shouldn't stir anymore. When the salted caramel is good, pour in the warm cream. Be careful, this will splash and bubble and is very hot. Stir the mixture well until even. Stir in the butter until dissolved. Remove the pan from the heat and let the caramel cool to room temperature.
  8. Coat the brownies with the cooled caramel. Top with remaining toasted pecans and sea salt flakes for the ultimate caramel and sea salt brownie.
  9. Enjoy! 😊
